The following treat will hopefully be a pleasant surprise for my sweet husband this evening after he comes inside after mowing the lawn. 🙂 I don’t know what to call this exactly: a Country Pie, or something I guess. 🙂 I found this basic recipe on another website, and adapted it to my liking & to what ingredients I had on hand!

Crust:
2 1/4 cups flour
1/3 cup sugar
1/4 tsp salt
3/4 cup chilled butter
ice cold water (maybe 1/4 cup? I wasn’t really paying attention…)

Combine flour, sugar, and salt in a bowl, and cut in the butter until coarse & crumbly. Add some of the cold water a bit at a time, enough to make the dough just start to come together. When it seems like it’s pulling together enough (but definitely not too wet or it will get gummy), dump onto a floured surface and pat into a round. Wrap with plastic wrap and chill until the filling is prepared.

Filling:
~4 cups of fruit — I used one pear (peeled, cored, & cut into chunks), 2 apples (peeled, cored, and sliced thinly), and a bunch of strawberries (hulled and sliced into halves or quarters)
1 Tblsp lemon juice
1 cup sugar
1/3 cup flour

Dump all ingredients into a bowl, and stir to combine. Let sit for at least 10-15 minutes.

Next, roll out the dough into a circle, about the size of a pizza (mine was maybe 18 or so inches across). Carefully transfer the dough onto a greased baking sheet (preferably with sides, to catch the juice). Scoop the filling into the center of the dough circle, leaving about two inches of dough vacant around the edges. Fold the extra dough over the filling, and sort of pinch it together to make it stay put. 🙂 Brush dough with cream, and sprinkle generously with sugar. Bake for 35-40 minutes in a preheated 400 degree oven.
